Salads From Around The World: Moroccan Salad

So we are already nearing the end of our first month of January. How did that happen?? The weather in Melbourne has gone from being too hot to move to cold and now today we have weather which is perfect. It is the perfect time of year to get outside, get active and get some good food into you (like some delicious salads!). 

I told you guys in the last post that I was going to post each week (I'm doing good so far!) and I would keep up with my exercise and fitness. Well, in the past week I have started running again, as well as keeping up my swimming. I forgot how good it feels to challenge yourself in a run, to beat the speed from your previous run, or just run that little bit further. My legs have certainly been paying for it but that is always a feeling I enjoy! There is something very motivating about summer. It's like your body just WANTS to get outside, absorb the suns rays and get moving. Now I am certainly no fitness queen (very far from it!) but I really do encourage everyone tries to do that little bit of exercise when they can. There is nothing I love more than waking up and taking the dogs for a walk (even if it can be quite a traumatic experience with a miniature dachshund and a baby pugalier) as it really does clear my head. The same goes for after a stressful day at work there is nothing like a walk/jog to take that stress away or even a bike ride. I know a lot of us make excuses that we don't have time, but even if it's 100 squats before bed and a small walk in the morning before work/school our bodies will thank us more than we know.

This week I will also be getting a Kuvings Wide Mouth Cold Press Juicer and I could not be more excited. I am very much a health nerd so I really cannot wait to get this in my hands! I put it out to all my Instagram followers if they would like me to do daily juice posts, and I got quite a lot of responses saying yes! So when I get the juicer I will be doing daily posts for a couple of weeks which you guys can follow to pack your body filled with nutrients and get you feeling good! I will also tell you guys more about my chosen juicer as I made sure I did lots of research before I landed on the amazing Kuvings.

For now please enjoy this salad recipe which again in appears in my spread in the latest Nourish Magazine, so if you're yet to check it out remember it is available at Coles, Woolworths and news agencies across Australia. This is one of my favourite salads ever as it is so damn flavourful!


Ingredients

1 pomegranate deseeded
1/4 cup sunflower Seeds
1/4 cup pepitas
1/4 cup whole dried cranberries
1/4 cup turkish apricots
1/4 cup currants
1/3 cup pistachios
2 tbsp pine nuts
1/4 cup slivered almonds
1/4 cup whole roasted almonds
1 cup freekah
1 bunch flat leaf parsley
1/3 cup rose petals
3 tsp pomegranate molasses
2 tbsp olive oil
1/2 tsp pink lake sea salt


Cook freekah in a pot of boiling water for 25-30 minutes until tender. Drain, rinse under cold water and set aside in a salad bowl.

Finely chop the turkish apricots into threads and place into a non stick fry pan with the slivered almonds, sunflower seeds, pepitas, pistachios and pine nuts and gently dry roast until golden (around 1-2 minutes). Remove from heat insuring they do not burn - and set aside to cool.

Into the rice add the currants, whole cranberries and 3/4 of the pomegranate seeds. Stir through with 1 tbsp of olive oil and the sea salt.

Chop up the parsley and mix in. Once nut/seed mixture has cooled, stir through the freekah with the whole almonds. Drizzle on the pomegranate molasses and olive oil and combine.

Just before serving add the rose petals and mix in.

Top with the remaining pomegranate seeds, a sprinkle of rose petals, pistachios and cranberries.
