Berry Breakfast Jar

Breakfast jars got a wave of popularity this year not only for their cute look but also for their on-the-go convenience. Make a jar the night before and you can grab it out of the fridge on your way to work/uni/school and know you've got a healthy and nutritious breakfast ready to start the day right without being late! The only drama with this is attempting to eat it in the car which I have done way too many times now, having to scoff a couple of spoonfuls at each red light.

Ingredients
 (makes one jar)
 
Mason jar
1/3 cup berries (raspberries, blueberries, blackberries work best)
1/2 cup yoghurt (greek, coconut or goats kefir)
1/4 tsp vanilla bean powder or a scrape of a vanilla bean
1/2 tsp stevia
1/4 cup muesli or granola
1 tsp chia seeds
1/2 tsp flax seeds
1 tsp pepitas
1 tbsp activated buckinis
shredded coconut
tbsp pomegranate seeds
Spoonful or two of your favourite nut butter (I use almond or rawtella for these)
 
  
Ok so these things are incredibly easy to make. What you need to do is grab your jar and the above ingredients. First thing to do is to make your vanilla yoghurt. In a bowl, mix the yoghurt with the vanilla bean and stevia. If it is still too tart for you (depending on the yoghurt you're using) add some extra stevia or even coconut nectar.
 
Then in your jar start layering. My first layer is always my berry layer, use half the amount you have and put it down the bottom of the jar. Next, dollop on half of your vanilla yoghurt mix. Top this with your chia seeds, flax seeds, pepitas and your chosen muesli or granola*. Cover with your healthy spoonful of nut butter. Try and spread the nut butter across evenly with the back of a spoon but don't mix it in too much as you don't want to upset the seed layers. On top of this add the rest of your yoghurt and flatten. Top with the remainder of your berries, then chuck on whatever else you have left! Buckinis, shredded coconut and pomegranate are my favourites to put on top.
 
Next all you have to do is put the lid on your jar and let it sit in the fridge until you're ready for it! Only problem with this is having the mental power to not grab it and scoff it straight away! Enjoy!
